Holiday Recipe: Cinnamon Molasses Apple Cake

The way to everyone’s heart on Thanksgiving is through their stomach… so today we have a delicious recipe to share! This delectable cake is perfect in the morning with a cup of coffee or as dessert paired with ice cream!

Preheat your oven to 375°F.

Instructions (Cake Batter):

Mix flour, baking powder, cinnamon, and salt in a medium bowl. Using an electric mixer, beat the butter in a large bowl until smooth. Gradually add sugar and beat until it’s well blended. Add eggs and vanilla; beat until blended. Beat in your dry mixture (flour, baking powder, cinnamon, salt), then add the sour cream/yogurt. Stir in the chopped apple slices.

Ingredients Required for Cake Batter:

  • 1 1/2 cups all purpose flour
  • 1 1/2 tsps baking powder
  • 1 tbsp ground cinnamon
  • 3/4 tsp salt
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 2/3 cup white sugar
  • 2 large eggs
  • 1 1/2 tsps pure vanilla extract
  • 1/2 cup sour cream OR plain yogurt
  • 1 Gala Apple, peeled, cored, finely chopped (about 3/4 cup)

Note: The batter will be doughy. Set the batter aside while you prepare the molasses apples.

Next, you’ll mix the sauce and cook the apples in a frying pan!

Instructions (Molasses Apple Sauce):

Melt butter in a 10-inch oven-proof skillet over medium heat. If you do not have an oven-proof skillet, wrap a double layer of heavy duty foil completely around the handle (pictured). Add brown sugar and molasses; stir for about 2 minutes (until melted and the mixture is bubbling).

The butter will not fully incorporate into the brown sugar & molasses; it will look like “oil and water” – so don’t be alarmed!

Add apple slices to the skillet and cook until golden brown – making sure to stir constantly. Remove the skillet from the heat and let it cool for 3 minutes. If you’d like, arrange the apple slices concentric circles for presentation (pictured.)

Ingredients Required (Molasses Apple Sauce):

  • 6 tbsps (3/4 stick) unsalted butter
  • 1/3 cup (packed) brown sugar
  • 1/4 cup molasses
  • 3 Gala Apples, peeled, cored, halved, cut into 1/4 inch thick slices

Carefully spoon the cake batter into small dollops atop the apples inside of the skillet. Using a spatula, gently spread the batter as evenly as possible over the apples. The batter will seem to float on top.

Bake this for 30 minutes, or until the cake is golden brown. Insert a toothpick into the cake. If it comes out clean, you’re good!

Cool in the skillet for 10 minutes. Run a knife around the edges of the cake to loosen it up.

Last but not least, flip the cake out of the skillet, onto a large plate. And voila! You’ve got one delicious Cinnamon Molasses Apple Cake!
